Norwegian Waffles (Vafler)
Waffles are an essential Norwegian tradition. Not a week goes by in a Norwegian home without a waffle being eaten. Unlike the Belgium waffles, Norwegian waffles are large, soft and fluffy and fit perfectly folded in your hand.
Makes 5 large waffles
Ingredients
400 millilitres (or other non-dairy milk)
1 tablespoons of apple cider vinegar
75 millilitres sunflower oil or other neutral oil
50 grams sugar
1.5 teaspoons baking soda
1/2 teaspoon cardamom
pinch of salt
100 grams all-purpose flour
Method
Whip milk and oil together in a bowl, and leave to rest for 5 minutes until it thickens slightly.
Mix in the rest of the ingredients. Leave to rest for minimum 5 minutes. You can also leave it in the fridge overnight.
Fry away. Tip: put some oil or margarine in the iron to avoid sticking.
To serve
Serve With hot jam or sugar - tuck in and not (enjoy!)
