I have been in the restaurant industry for 13 years, working in some of the most experienced kitchens in the country and abroad, ranging from Michelin stars in London to private dining in the Swiss Alps.

 I have unfortunately witnessed first-hand the immeasurable amount of avoidable food waste that can be produced due to a lack of knowledge, creativity, and concern in some of these kitchens. It opened my eyes to the importance of reducing our food waste, creating a more sustainable food system, and how integral zero-waste cooking practices are.

For those reasons, it has become my goal to put my experience in the industry towards advocating and educating others about the food waste we produce, utilising and preserving what we can, and its overall impact on our planet and the economy.

My number one #FoodSavvy tip would be that the freezer is the perfect pause button. Don't be afraid to freeze leftovers, food items approaching their use-by date, or food you have bulk-made. These can all be defrosted at a later date and utilised then instead of going into the bin.

My stale bread pasta is my favourite dish to reduce food waste. Bread is the number most wasted food product and turning it into pasta is a fun and creative way of using it even once it has turned stale.
