Feeling’ Fly Flapjacks

These flapjacks are the perfect waste busting, energy giving - sweet thing. They are flexible enough to include a range of ingredients depending on your tastes and what you have available. A delicious treat for a lunch box, long walk and picnic.

Ingredients

  • 2 tablespoons smooth peanut butter (optional)

  • 3 tablespoons of date or maple syrup or honey

  • 2 bananas, mashed (brown and squidgy are perfect for this)

  • 50 grams coconut oil, plus a little extra for greasing (or use butter)

  • 1 apple, grated (use the peel as well)

  • 250 grams rolled oats

  • 185 grams (dried mixed fruit - sultanas, apricots, raisins - whatever you have)

  • 85 grams mixed seeds (optional)

Method

  1. Heat oven to 160C. Grease and line a 20 centimetre baking tin or pyrex dish with baking parchment. Heat the coconut oil/ butter, peanut butter and honey or date/ maple syrup in a small pan until melted. Add the mashed banana, apple and 100 millilitres of hot water, and mix to combine.

  2. Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Taste and adjust sweetness with syrup or honey, a pinch of sea salt might be nice too.

  3. Tip into the baking tin and level the surface. Bake for 40 minutes until golden. Leave to cool in the tin. Cut into about 10 pieces to serve.
