Chickpea “No Tuna” Sweetcorn Salad
Looking for a swap for the usual tuna sweetcorn? Try this 5 minute lunch filling, perfect for sandwiches, wraps, or a side salad!
Serves [4]
Ingredients
1 tin of chickpeas
1 small tin sweetcorn
1/2 red onion
4 tablespoons mayonnaise or vegan mayo (Hellmans, vegannaise)
1 teaspoon mustard
1 tablespoon chopped up capers/pickles/olives/gherkins for tanginess
pinch of salt and pepper
Method
Drain and rinse the chickpeas into a bowl
Mash the chickpeas roughly with a fork
Drain and rinse the sweetcorn and add in
Mix in all the other ingredients!
Chill in the fridge
