Bread sauce

A simple but classic sauce to accompany your Christmas lunch, it’s also a great way to use up any stale bread that might go to waste.

Makes about 6 portions

Ingredients

  • 1 onion peeled

  • 8 cloves

  • 6 peppercorns

  • Half a teaspoon nutmeg

  • 1 bay leaf

  • 500 millilitres milk

  • 200 grams white breadcrumbs

  • 25 grams butter

  • 1 tablespoon cream - optional

  • Salt & pepper

Method

  1. Press the cloves into the onion and place in a saucepan with the peppercorns, nutmeg, bay leaf and milk.

  2. Bring to the boil and then remove from the heat and leave for 10 minutes for the spices to infuse into the milk.

  3. Sieve the milk and return to the heat, add the breadcrumbs and stir until thickened.

  4. Stir in the butter and cream, if using, then season with the salt & pepper.
